When a broker quotes you a catering order, the figure you read is not the kitchen's figure.
Coordination is real work and it has to be paid for, so it is folded into the item price, where it cannot be separated from it again. None of this is hidden in any legal sense and most of the industry is built this way.
The consequence is the part that matters to you. You cannot tell what the food cost and what the arranging cost.
Two quotes for the same aircraft on the same morning can differ by a third, and nothing on either of them tells you why.
The supplier's price reaches you as the supplier set it.
Our fee sits on its own line, with our name against it, and you see it before you approve anything.
On fuel the separation is physical rather than typographic: the supplier invoices you for the fuel, we invoice our coordination. Two documents, two names.
We take no commission from any supplier, so nothing we are paid changes with the one you end up with.
We own no kitchens, no trucks and no fuel. We hold no stock, and we carry no supplier we need to keep busy. That is the whole of the difference: a company that has to fill its own kitchen has a reason to put you in that kitchen, and we do not have one.
The published fee is the entirety of our revenue, and it is set at the level it needs to be for that to work. There is no second income behind it that would let us quote low and recover elsewhere.
We cannot discount. The rate is published, so cutting it privately would mean the published rate was never true.
We cannot beat a supplier's price. We put work out to several suppliers and we pass back what we were quoted, but we do not control what a kitchen or a handler charges, and we will not disguise a poor price by absorbing it into our own.
On small orders our minimum applies, and our fee is then a larger share of what you pay than it would be on a large one. The work is the same either way, which is the reason for it, but it is still true.
